Catalog Course Description
This course focuses on purchasing policies and procedures in procuring foods, beverage, equipment, supplies and services for the hospitality industry.
Course Learning Outcomes
Upon completion of this course, students will be able to:
1. Describe the importance of the purchasing function, identify the members of the foodservice distribution channel, and evaluate the value proposition each member provides to the end user.
2. Describe the content of purchase specifications for various food and beverage products used in food service operations.
3. Discuss the auditing trail as it applies to a food service establishment. (I.e. purchase orders, requisition forms, purchase requisition, and specification.).
