Catalog Course Description

Students explore carbohydrates, lipids, proteins, vitamins, minerals, and water as well as their functions within the body, with an emphasis placed on current dietary recommendations for maximizing well-being and minimizing the risk of chronic disease. Additional topics include: making healthy food choices, basic elements of food safety, functions of the human digestive system, principles of energy balance, requirements for improved fitness, and meeting the unique nutritional needs of individuals from various life stages and cultures. This course meets Gen Ed 2, Natural Sciences, when taken with SCI 1025 Nutrition Lab.

Course Learning Outcomes

Upon completion of this course, students will be able to:

1. Apply the information from food labels and the current food guide to make healthy food choices.
2. Recall the functions of the dietary reference intake values.
3. Use the dietary reference intake values to determine appropriate food choices and caloric needs.
4. Describe the structures and functions of the digestive system.
5. Recall the functions different nutrients perform within the human body
6. Recall names and symptoms of nutritional deficiencies and excesses.
7. Understand the relationship between energy input and expenditure.
8. Understand how the human body uses nutrients as fuel during physical activity.
9. Explain the proper ways to store and cook food to avoid food-borne illnesses.
10. Choose appropriate foods that meet the nutritional needs of various life stages and cultures.
